Carol R. Schaefer (Andersen)

Victoria, MN - Carol R. Schaefer, age 91, formerly of St. Louis Park, passed away on October 22, 2025.

Preceded in death by her parents, Reynold and Blanche Andersen; her husband and the love of her life, David A. Schaefer; and brother and sister-in-law, Bruce and Pam Andersen.

Survived by her four sisters: Sharon, Beatrice (Rob), Sue, and Betsy; children Katharine (late Phillip) Boreen, Tim (Vickie) Schaefer, Peggy Darst, Linda Schaefer, Mary Kay (Ritch) Solverson, and John Schaefer. She was a loving grandmother to 14 grandchildren and 19 great-grandchildren, and survived by many beloved relatives and friends.

Carol was a longtime employee of the Pillsbury Company. A person who truly loved life, she was a world-class traveler, devoted gardener, avid reader, exceptional cook, and music lover. Above all, she was a loving wife, mother, grandmother, and “GG” to her many adoring great-grandchildren.

She will be remembered for her fearless independence, her commitment to conservation, her love of Jeopardy! and the New York Times crossword, her Scrabble skills, and her superb fudge and chocolate chip cookies.

A private burial service will be held. In lieu of flowers, memorials may be directed to the Minnesota Landscape Arboretum.
