Kirscht, Edward (Ed) Jerome

age 89, of Plymouth, MN, originally from Albertville, MN, passed away peacefully late Monday night, July 24, 2023.  Survived by his three children; Patrick (Kelly), Renee Kirscht-Rascher (Bill) and Kirk (Amy).  Also survived by 7 grandchildren; Jacob and Ashley Rascher, McKenna and Audrey Kirscht and Lizzie, Josie and Addison Kirscht.  Preceded in death by his wife, Lavon Kirscht (Bonnie Beaudot); parents, John George and Agnes Kirscht; sister, Mary Jane Kirscht; and brothers, Louis, Bennet, Eugene and Roger Kirscht.

Ed was born on January 29th, 1934 in Albertville, MN and grew up on the family farm.  He graduated from Elk River High School in 1951 and played minor league baseball in Arizona for a couple of years.  He was later drafted into the Army where he served for two years.  After the Army, he worked construction until he hurt his back which put him into a body cast for several months.  Not being able to work construction, he attended Dunwoody College obtaining a Civil Engineering Certificate and started working at the City Crystal.  He met his wife Lavon at the Prom dance hall and they were married in 1966.  He also worked for the cities of Plymouth and Eagan and retired in 1995.

Ed and Lavon spent many exciting years attending school activities, sporting events, gymnastic meets and dance competitions of their three children while growing up in Plymouth MN.  Ed also coached his youngest son’s (Kirk) baseball team where he was known as a great hitting coach and led the team to a championship.  As a 50 year active member at St. Bartholomew Catholic Church in Wayzata, Ed volunteered in a variety of ways.  All three of his children attended school and were later married at St. Bartholomew.

Ed and his wife Lavon were blessed with a lengthy retirement together, taking several cruises and traveling with family and friends and wintering in FL and TX prior to having grandchildren.  Ed enjoyed hosting family gatherings, playing cards with his brother, fishing with his sons and deer hunting.  Even in his weakened state last fall he was able to harvest a very nice nine point buck.

Ed was known for many wonderful qualities such as being a perfectionist when building something and as a very hard worker.  However, he will be remembered as being rather outgoing, walking around the neighborhood and Ridgedale visiting old friends and making new ones.

The Family would like to thank the dedicated and caring staff at Amira Choice in Plymouth and Moments Hospice team for providing wonderful and loving care during his final days.

A visitation will be held 10am followed by Mass of Christian Burial at 11am on Friday July 28, 2023 at St. Bartholomew Catholic Church, 630 E. Wayzata Blvd. Wayzata, MN 55391.  Following the mass, a luncheon will be held in the church’s cafeteria.  A processional to the burial ceremony at Parker’s Lake Cemetery will be held after the luncheon.  In lieu of flowers, donations preferred to Interfaith Outreach (iocp.org) where Ed and Lavon volunteered for many years.
