Elizabeth Ann "Betty" Conway (née Eull)
Elizabeth Ann "Betty" Conway, 90, of Plymouth, Minnesota, passed away unexpectedly on September 28, 2026, in New Hope.
Betty was born on September 3, 1936, in St. Michael, Minnesota, the youngest of 13 children of Venard and Elizabeth Eull. She grew up on the Eull family's dairy farm; of German heritage, the Eulls were one of the founding families of St. Michael, a German Catholic community west of the Twin Cities. She attended elementary school in a one-room schoolhouse and then boarding school at St. Francis High School in Little Falls. Fittingly for a dairy farmer's daughter, she was crowned Buffalo Dairy Princess.
While working at Prudential Insurance, Betty befriended a coworker, Mary, later the family's beloved Aunt Mary, who introduced her to William J. "Bill" Conway. Betty and Bill were married in August 1957 and built their life around faith, family, and friends, many of whom were from St. Michael, Minnesota, and the north side of Minneapolis.
Betty's Catholic faith guided her life. She was actively involved at St. Anne's, St. Margaret Mary's, and Benilde-St. Margaret's while her children attended school there, especially in the mothers' groups. She and Bill loved to travel together, at home and abroad, with trips to Hawaii, the Caribbean, Germany, and Ireland, and a pilgrimage to Medjugorje with Fr. Arnold Weber, OSB, former pastor of Holy Name of Jesus and close friend of the family.
After the children left home, Betty found great joy in returning to the workplace. She sold jewelry at Miller's Jewelry in Wayzata and spent nearly 25 years as the church receptionist at Holy Name of Jesus.
She loved to host, entertain, and cook, and she was famous for her German dishes, especially her potato salad. She was always up for family fun. She could be dressed down and working around the house one moment, then dressed up and bedazzled to welcome family and friends the next. She was beloved by nearly 100 nieces and nephews and adored by her grandchildren and great-grandchildren.
Betty was deeply loved by all who knew her, and she was the foundation of our family. She will be dearly missed.
She was preceded in death by her husband, Bill; her parents, Venard and Elizabeth Eull; and her 12 siblings, seven brothers and five sisters.
She is survived by her children: William "Shawn" Conway, Kellie Ann Conway, Kari Marie Conway (John Lofquist), Kevin Patrick (Veronica) Conway, Kathleen "Katie" Elizabeth (Jason) Rosendahl, and Shannon Maureen (Dave) Neels; special loved ones Lisa Conway, Chris Borer, and Anita Griffin; 19 grandchildren; 26 great-grandchildren, with one on the way; and many nieces, nephews, and friends.
A visitation will be held at 10 a.m. on Friday, October 9, 2026, followed by the Mass of Christian Burial at 11 a.m., at Holy Name of Jesus Catholic Church in Medina, Minnesota. Burial will follow at the cemetery across the street, and a luncheon will be served afterward.
In lieu of flowers, memorials may be directed to Holy Name of Jesus Pro-Life Ministries.
